Pumpkin Cheesecake Bars
I made this a few weeks ago. It was PERFECT!
Ingredients:
Crust:
1 3/4 cups graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick melted salted butter
Filling:
2 8-oz. packages cream cheese
1 cup sugar
1 can pumpkin puree
3 large eggs
1 teaspoon vanilla extract
3 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
Time:
about 1 hour and 15 minutes cooking time(15-20 prep time)
Steps:
Preheat oven to 350 degrees. In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9x9 pan. Set aside. For the filling, with an electric mixer on medium speed, beat cream cheese and sugar until smooth, about 2 minutes. Beat in pumpkin, then eggs, 1 at a time. Beat in vanilla, flour, spice and salt until just combined. Pour mixture into pan. Bake until cheesecake is set around edges but wiggles slightly in center, 40 to 45 minutes. Cool completely on rack. Cover with plastic wrap and chill until firm, at least 3 hours.
EXTRA: serve with some whipped cream with vanilla extract

ReplyDeleteVery pretty. So not for me though. I can't do pumpkin or cheese in desserts. LOL It's so one of my weird food quirks. Love the fishy dish :)
